Little taco, big dream

New restaurateurs bring Central American cuisine to North Liberty

NORTH LIBERTY– Mexican restaurants are a stone’s throw away in most U.S. cities, but Central American food is much harder to come by.
That’s no longer the case for North Liberty residents, who can now dine on fried plantains, yucas, pickled cabbage and more at El Taquito, a new Mexican-Central American fusion restaurant located in Beaver Kreek Centre.
“I know there are already several Mexican restaurants here in town, but we decided to focus on different foods so we wouldn’t be so much of a competition,” said El Taquito owner Maribel Romero.

Loyalty at long last

By Shianne Fisher
North Liberty Leader
NORTH LIBERTY– The North Liberty City Council buried thousands in bones for a dog park in its FY17 budget, but it may take proponents of the pet-friendly recreation area a while to dig up.
At its Jan. 28 budget meeting, the council agreed to reserve $10,000 per year from a surplus in the city’s hotel/motel tax. The item will be revisited each fiscal year and allocated to other areas if necessary.

Better, but not great

NL residents anxious for Forevergreen improvements, interchange

NORTH LIBERTY– Construction on West Forevergreen Road and the new Interstate 380 interchange could be underway by late 2017, but for some North Liberty residents that’s just not soon enough.
“It couldn’t happen quicker for me,” said Duane Miller, who lives in the new Fox Valley development. He said it’d be “very convenient” to be able to hop on the interstate within just a few minutes from his house.

Cold wind blows title Solon’s way

Girls take Tipton Early Bird meet

By Joe Wilkinson

TIPTON– With gusts of 30 miles an hour, strong winds might have made it feel like Solon’s girls were running uphill much of the way. However, the team title at the March 29 Tipton Early Bird Co-ed Track Invite made it worth the effort. It could have been worse; gusts of 45 miles an hour cancelled the girls’ April 2 meet at Kingston Stadium in Cedar Rapids.
